1½ ounces Mezcal, preferably Espadín
¾ ounce St. George spiced pear liqueur
¾ ounce freshly squeezed lemon juice
½ ounce Spiced Demerara Syrup
2 dashes Bitter Truth aromatic bitters
1 whole star anise for garnish
Combine the ingredients, except the garnish, in a cocktail shaker filled with ice. Shake until chilled, about 15 seconds. Fine strain into chilled coupe. Garnish with the star anise, floated on the drink’s surface.
